Devilled eggs is fairly easy and cheap dish and perfect for a Keto diet. We normally have it with pork or chicken but it goes nicely with vegetables as well. And for you non-Ketoers out there: devilled eggs are lovely with new potatoes too ?. Ingredients: 6 large eggs, hard boiled 300ml extra thick fresh cream 0.5 small onion, finely chopped 2 tsp of mustard (which one depends on how spicy you like your devilled eggs) 1 tsp coconut oil Salt Pepper Chives, finely chopped Parsley, finely chopped Method: Fry the onions in the coconut oil. Lower the heat and bring the extra thick fresh cream to a gentle simmer. Don't boil it. Add the mustard and salt and pepper to taste. You can leave the eggs whole or if they are being little idiots and refuse to peel properly like mine were, then cutting them up is absolutely fine. Add the eggs and carefully mix with the sauce Add the chives and decorate with the parsley. Very easy dish, and I do hope you'll enjoy it! ? © Cook, Little Pot, Cook - 2017
