I think I might be addicted to smoked salmon, and in this WOE, I am actually no longer worried about the fat content in salmon. I was told once that salmon despite being full of good oils, is one of the worst fish you could have one diet. I disagree. Do you?

Dug out my old fitness tracker and it still works ? Whether or not I move more now will have to be seen... I just thought it better to use a simple fitness tracker as I don't really exercise rather than spending over £100.- on something I don't really use. What do you think? What are the features that you need to have in a fitness tracker? Do you have one at all? Ingredients: 120g Alpro plain yoghurt 1 tsp psyllium husks 40g frozen raspberries 0,25 tsp chia seeds Method: Mix the yoghurt with the psyllium husks and chia seeds and leave to rest until it has reached the thickness you prefer. You can add any fruit you like too ? As some of you who follow me on Instagram might have noticed (or not) .. I have been away on holiday to good old Germany. I have come back from this rather non-keto holiday with some additional baggage, however, I am quite confident that I will shed this holiday weight soon. Good to be back! :) This is a Keto lunch German style... My husband and I decided to visit the Fränkisches Freilandmuseum - an open air museum in Bad Windsheim, Germany - and as we felt a little bit peckish, we decided to have some lunch in one of the three restaurants on the museum grounds. This is lunch... and it's Keto. Do you think they'd mind us moving in? So not Keto, yet so tasty. This is a whiskey cocktail and I had this on a long overdue night out with my husband, sister and brother-in-law. We went for a lovely (yet not keto) meal before heading for a few drinks. Needless to say drinking on Keto isn't the best thing to do, but as I said on my WOE: I do lazy keto and I am planning to stick to Keto for as long as I can. Not being able to go out for a meal and some drinks, or having a carby day is not my idea of living the rest of my life. So please be kind, this is my WOE, and it might be different from yours. We all like mug cakes but so far I haven't really found one that I really like. This peanut butter mug cake however is delicious and I am sure with a few tweaks this could potentially be the best mug cake ever! And all this with three ingredients! Ingredients: 3 tbsp (45g) of smooth peanut butter 3 tsp sweetener (or to taste) 1 large egg Method: Mix all ingredients in a large mug and microwave at 900W for one minute. This is a low carb bread based on quark and it has 6 carbs per slice. I have tried many different low carb bread recipes and I didn't like a single one of them. But this one I love and it can be toasted, too! ? Ingredients: 2 large eggs 500g cooking quark 300g ground almonds 50g Chia seeds 5g baking powder 1 tbsp psyllium husk Salt Method: Mix all the ingredients and bake at 180C for 40 minutes. Just leave it for longer if it's still too soft. I think the standard bread test can be applied here. Devilled eggs is fairly easy and cheap dish and perfect for a Keto diet. We normally have it with pork or chicken but it goes nicely with vegetables as well. And for you non-Ketoers out there: devilled eggs are lovely with new potatoes too ?. Ingredients: 6 large eggs, hard boiled 300ml extra thick fresh cream 0.5 small onion, finely chopped 2 tsp of mustard (which one depends on how spicy you like your devilled eggs) 1 tsp coconut oil Salt Pepper Chives, finely chopped Parsley, finely chopped Method: Fry the onions in the coconut oil. Lower the heat and bring the extra thick fresh cream to a gentle simmer. Don't boil it. Add the mustard and salt and pepper to taste. You can leave the eggs whole or if they are being little idiots and refuse to peel properly like mine were, then cutting them up is absolutely fine. Add the eggs and carefully mix with the sauce Add the chives and decorate with the parsley. Very easy dish, and I do hope you'll enjoy it! ?
In my family this fat bomb soup is called Odin's Cheese soup. It was invented at a meeting of the Pagan Federation, and it was decided that only Odin himself could possibly stomach this amount of fat... do you want to prove us wrong? Give it a go!
Ingredients: 500g beef mince 300g extra thick double cream 200g cheese spread 200g medium cheddar, grated 2 garlic gloves 250g tenderheart cabbage, finely sliced 150ml vegetable stock 1 tsp coconut oil 1 tsp oregano 1 tsp majoram salt pepper Method: Fry the beef mince and crushed garlic in the coconut oil. Add the extra thick double cream and simmer for a few minutes before adding the cheese spread. Make sure the cheese spread has melted before adding the grated Cheddar or you might end up with lumps .. and who likes lumps in their soup? The soup will thicken up quite a bit, so add the vegetable stock to reach the consistency you prefer. Finally the tenderheart cabbage, then season to taste. Depending on the cheese you use you might not need any additional salt. I hope you enjoy this soup as much as Odin would ! This dish might not look the most appetising dish, but it is amazing nonetheless! So why don't you give it a try yourself? Ingredients: 400g chicken 300ml extra thick double cream 300g spinach, finely chopped 1 small onion, finely chopped 1 garlic glove, crushed 100g Castella blue cheese Salt Pepper Method: If you use frozen spinach, thaw it thoroughly. Wash the spinach and chop it. Add the spinach to a food blender and together with the cream, the onion and the garlic, blend it until you have a smooth paste. Heat up the creamy spinach in a pot (careful: it does burn easily) and add about half of the blue cheese. Keep storing while the cheese melts. Salt and pepper to taste. Set aside. Brown off the chicken breast in a frying pan (optional) and transfer it to a casserole dish. Top the chicken with the spinach and add the rest of the cheese. 30 mins at 200C - longer if your chicken breast is particularly thick. I tried LC wraps today filled with chilli con carne and salad. The wraps are made from coconut flour, eggs whites and water. And... I have to admit I wasn't very keen! The wraps had a nice texture at first but became fairly dry very quickly. I will add the recipe anyway, but will hunt for a better recipe: Ingredients: 500g lean beef mince 1,5 large onions, finely chopped 3 garlic cloves, crushed 2 tsp ground cumin 0,5-1 tsp dried chilli flakes 1 tsp ground coriander 1 tsp smoked paprika 400g can chopped tomatoes 1 tbsp Worcestershire sauce 1 beef stock cube Salt and pepper Method: Fry the mince for 8-10 minutes, add the onions and the garlic and fry for 5 minutes. Add all the remaining ingredients. Stir well and bring to a simmer. Return the mince to the pan and gently boil for 20-30 minutes or until thickened. Ingredients for the Low Carb Wraps 75ml water 30g coconut flour 6 egg whites 0,5 tsp cumin Salt and pepper Method: Mix all ingredients and mix well in a blender. Leave to stand for 8-10 minutes for the coconut flour to soak up the moisture. Heat some oil in a pan and fry like a crepe. My husband calls this Arabian Chicken because it uses Harissa, but it is actually just a fairly simple chicken bake with tomatoes, Harissa and cheese. Very tasty, slightly spicy and I do hope you'll enjoy it! Ingredients: 400g chicken breast in cubes or strips 400g tinned tomatoes 2 tbsp Harissa paste (e.g. Fnare or Le Phare Du Cap Bon Tunisie) 1 large onion, sliced 2 tbsp extra thick double cream (or thick yoghurt) 3 garlic gloves, crushed 2 medium tomatoes, sliced 50g grated cheese 2 tsp Schwartz Reduced Salt Season-All (not the standard one as this has a different recipe) 0,5 tsp Schwartz Moroccan Spice Mix Salt & Pepper Method: Fry of the chicken in some coconut oil, or any other oil that you prefer. Set aside, and fry off the onions and garlic. Add the tinned tomatoes, the Harissa paste, the spices and cream (yoghurt). Simmer at a low temperature for about 5 minutes before adding the chicken again. Simmer for another 5 minutes. Add the mixture to casserole dish and evenly distribute the tomatoes on the mixture. Add the cheese and bake in the oven at 200C for about 15 mins. I have tried pizza bases made from cauliflower before and I didn't like them. I don't know why, but I wasn't keen. So when I found a recipe with quark I was intrigued. So I tried it and it's lush!! Ingredients: Base: 120g Quark - I used Arla Garlic & Herb 120g grated cheese 2 eggs Sauce: Tomato passata Herbs of your choice Toppings of your choice Method: Mix the quark, the cheese and the eggs, and spread the mixture evenly on a baking tray - do not forget to put baking paper on, otherwise you will never ever get the pizza off. Bake at 175C for 20-30 mins. The base should be well cooked and crispy. A little warning: the base will bloat.. but it will deflate again, so don't worry! Now it's time to add your toppings! I used some tomato passata, seasoned it with Italian seasoning, salt and pepper. My toppings were mushrooms, ham, onions and some additional cheese. Pop back into the oven until the cheese has melted. Low Carb Bounty... that! ⭐️ I didn't believe it either, but there is such thing as low carb bounty. And the best about them? Less than 2 carb per piece. The recipe makes 15 pieces, and they are quite a size, too! Ingredients: 50g butter 20g coconut oil 3 tbsp sweetener 200ml heavy cream/double cream 200g desiccated coconut 100g 90% Lindt chocolate (14 carb per 100g) or any other low carb chocolate Method: Mix the butter, the coconut oil with the cream and bring to the boil. Add the sweetener. Take of the heat and mix the coconut in. Now either press the mixture into a form if you have one, or alternatively heap the mixture onto clingfilm, creating like a long sausage. Roll tight and leave to set in the fridge for 3-4 hours. Remove the mixture from the form, respectively the clingfilm and cut into pieces of the same size. Melt the chocolate in the microwave or heat it in a bain-marie. To avoid burning add a dollop of coconut oil. Cover the bounty pieces in chocolate and leave them drip and cool on a metal rack. Ingredients: 400g iceberg lettuce 400g beef mince 40g onions 70g streaky bacon 50g cheddar (block or grated) salt & pepper 80g mayonnaise 15g ketchup 1 tsp mustard 60g gherkins (sweetened, please use the ones with sweeteners rather than sugar) 10 ml liquid of the gherkins Time: ca. 45 min. / Cooking-/Baking time: ca. 10 Min. Resting time: ca. 30 min. Method: Cut the gherkins in very fine cubes. Mix the mayonnaise, ketchup, mustard and the liquid of the gherkins and add the gherkins. Leave the dressing to rest for 10 - 30 mins. Clean and cut the iceberg lettuce in strips of about 1 cm in width. Dry thoroughly. Cut the cheddar into thin strips, or alternatively use grated cheddar. Fry the bacon in a frying pan, or for a healthier option use the grill. Cut the onions into fine cubes and fry off in the bacon fat, or if you prefer doing the bacon under the grill, use a non-stick pan. Add the beef mince and fry off well. Spread the beef mince and add half of the cheddar, covering up the pan so the cheese melts. Mix the other half of the cheddar with the iceberg lettuce. Spread the onion/beef mix across the iceberg lettuce, add the bacon and service immediately. This is my first blog post :) .
I have been following the Keto WOE since March, but have experience from back in 2013 when I first started Atkins and then Keto. I have lost 20 lbs so far and have been recording my images and recipes on Instagram. This is a blog that will feature recipes that I put on Instagram, so you and I can go back to them and cook them again and again and again. It will also feature NSV, motivation, rants and all sorts of other stuff that pops into my mind. Experience tells that a lot of random stuff pops into my mind, so be warned :) |
